For over 20 years, Nicholas perfected his small batch ice cream and decided it was time to showcase his sweet side. He set his sights on the ice cream market and opened three Nicholas Creamery locations in three years.

Jodie Edwards is a girl from Pennsylvania who loves the simple things in life, like good times with her fam and some seriously good ice cream. After spending 8 years working at Paul Wilmot Communications for Dylan's Candy Bar, Calvin Klein and others, she spent the last 10 years as Nicholas' Marketing Director and hopped on board the ice cream bandwagon to make her dreams come true.

Kelly Kennedy West grew up cooking and baking with her Mom on the Jersey Shore. After graduating from the Culinary Institute of America, she honed her skills at The Gramercy Tavern in NYC before joining Restaurant Nicholas in 2011. In her ten years at Nicholas, Kelly was known for her seasonal dessert creations paired with her ridiculously delicious homemade ice cream. Besides churning out the Creamery's small batch flavors, Kelly spends time baking with her sweetest creation, her daughter Kennedy.
